I took a few days off last week; my little family and I packed our bathing suits and went away for some much needed rest and relaxation. While away, my husband and I made a promise to put away our cell phones and devote our attention to our 2 year old (soon to be 3) toddler.

I did cheat! I snuck a few glances at my IG feed and liked a picture or two before going to bed,  but for the most part, I did a pretty good job staying off social networks!

We’re back, and to kick things off this week, here’s a non-traditional “mommy and me” post. It’s been freezing cold in Chicago, and being outside with the little one is out of the question, unless of course I’m dropping her off at  daycare.

So, to keep her entertained, and to keep my growing belly full, we I decided to bake!  Although I pride myself on baking from scratch, because in my head I’m the Barefoot Contessa,  today I relied on good old Duncan Hines.

The less ingredients the easier the clean up, the faster we get to baking, and the quicker the muffins get in my belly!

We used the Simple Morning Wild Maine Blueberry Muffin Mix.

Neriah said it was “delicious and nutritious”

Delicious? Yes… Nutritious? the verdict is still out on that one!
